Beef Stuffed Peppers Recipe
INGREDIENTS:
4 bell peppers
1 cup of rice
1 Lean ground beef (10%)
2-3 medium diced tomatoes
1/2 onion chopped
1 tsp of vegetable consomme.
1/3-1/2 can of small tomato paste
DIRECTIONS:
Steam the peppers for 10 minutes (until soft)
Sear onion. Add 3 cups of water, consomme, tomato paster and a touch of pepper, bring to boil. Add rice.
Cook on high with lid on for about 7 minutes. stir from time to time so the rice doesn’t get burnt. Don’t cook all the way. So make sure the rice is still semi wet.
In the meanwhile, cook the ground beef on medium-high in a skillet. Make sure you keep move the ground beef around until uniformly browned.
Mix all ingredients and stuff them in the green peppers (but the top, remove the membrane and seeds)
Put in a stove and bake for 20 minutes at 370F.
