Black Beans and Corn Salsa Recipe
INGREDIENTS:
1 can (12-16 ounce size) black beans
1 can (11-14 ounce size) white shoepeg corn
1/4 cup cilantro (Chopped) (Can be left out, troche if you don’t like cilantro)
1/2 cup chopped green bell pepper (Chopped) (Can be left out if not available)
1 medium purple onion, chopped (Sweet white onions would do too)
4 medium tomatoes, chopped/diced
1 jalapeno, chopped
1 tablespoon canola oil or olive oil (olive is healthier)
3 tablespoons lime juice (One lime would do)
1 teaspoon salt
1-2 teaspoon garlic powder It’s really to taste, if you like more garlicy, add more.
1 teaspoon of black pepper. (To taste)
Drain and rinse both beans and corn. Mix it all together and let cool (at least 2 hours so everything soaks up the taste)
