Israeli or Mediterranean Sambusak Recipe
My mother used to make sambusak all the time.
Here is a good recipe.
For the Dough:
- 1 1/2 tsp dry yeast
- 1 teaspoon salt
- 1 teaspoon baking powder
- 2 teaspoons sugar
- 1 cup water (Warm)
- 3 cups all-purpose flour
How to make the dough:
Dissolve the yeast in the water until foamy.
Mix the salt , baking powder, sugar, flour (leaving a little to add as needed) add water and mix.
Knead dough until firm. (All this can be done in a food processor)
Cover the bowl and allow the dough to rise for 2-3 hours.
For the filling:
- 1 extra large onion, chopped
- 1 teaspoon vegetable oil
- 1 (15 ounce) can garbanzo beans, drained and lightly mashed (just crush them a little with a wooden spoon or the bottom of a cup)
- 1/4 bunch fresh cilantro, finely chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- salt and ground black pepper to taste
Saute the onions until light brown, add the garbanzo beans, cilantro, cumin, coriander, salt, and black pepper and mix for about a minute on medium heat.
Roll the dough thin and cut 3” circles put enough filling and close the circle on itself to shape of a half circle. Fry until golden brown.
Note: In some places it’s customary to add eggs to the sambusak, I don’t like it. If you like it then for each or a few pieces of sambusak add the following:
- Break an egg into a greased cup cover with paper.
- Cook in a microwave oven on High setting for 30-40 seconds. (This depends on your microwave)
