How to make Gluten-Free Pizza
My daughter has Celiac Disease so we have to make gluten free foods for her (which basically means no wheat). Since I am a pizza-holic, I wanted to find a pizza that will be relatively cheap and tasty (It will never come close to the taste of real flour)
I’ve had really good success with Bob’s Red Mill Gluten Free Pizza Crust Mix, 16-Ounce Bags (Pack of 4). (At about $10 for a pack of 4 with subscribe and save, it’s really affordable)
There are a few tricks that will help you get a good pizza.
Buy a non stick pizza pan, preferably with no holes. like this one: ProBake Teflon Platinum Nonstick 12-Inch Pizza Pan
or OvenStuff Non-Stick 16 Inch Pizza Pan. Since it’s a non stick pan it will easily separate from it once it’s baked.
Once you have the gluten free dough prepared (following the instructions on the package) the dough will be gooey, meaning that you can spread it with your fingers on the pan. Just create a nice even very thin spread of the dough (one packet will be good for about 3 12.5” pizzas)
Put the pan in a preheated oven for about 10 minutes on the middle rack. This will remove a lot of the moisture in the mix and bake the crust just enough so that both the toppings and the crust are made at the same time.
Pull the crust out add the sauce and toppings and put it back in the oven.
People have asked me when is the right time to take the pizza out? That seems easy but really it’s tricky because you keep thinking the cheese is burning. Time wise at 500F it should be around 10-12 minutes. (but since we pre baked the crust at a lower temp and continue to bake at a lower temp with GF dough, it’s about another 10 minutes). Open the oven a few times to let the hot air out of the upper level of the oven so the cheese doesn’t get too hot. I also rotate the pizza a few times which lets the moisture out of the over (makes for a crispier crust).
One rule that worked for me, is when you think the pizza is ready, wait a little more and when you think it’s really ready, wait a little more and then take it out.
